Ingredients
- 800 g chickpeas (2 cans, drained)
- 400 ml coconut milk (full-fat)
- 400 g diced tomatoes (canned)
- 1 large onion (diced)
- 2 tbsp curry powder
- 1 tsp turmeric
- 150 g spinach (baby)
- 1 tbsp ginger (grated)

How to Make It
Sauté the onion until soft, add garlic and ginger, cook for a minute. Add curry powder and turmeric — toast the spices for 30 seconds until the kitchen smells incredible.
