Lasagna Soup
All the comforting flavors of lasagna in a cozy soup form. Broken lasagna noodles swim in a rich meat sauce broth, finished with dollops of creamy ricotta.
Ingredients
- 1/2 lb Italian sausage (casings removed)
- 1/2 lb ground beef
- 8 sheets lasagna noodles (broken into pieces)
- 28 oz crushed tomatoes (1 can)
- 14.5 oz diced tomatoes (1 can)
- 4 cups beef broth
- 1 medium yellow onion (diced)
- 3 cloves garlic (minced)
- 2 tbsp tomato paste
- 2 tsp Italian seasoning
- 1 cup ricotta cheese
- 1/2 cup mozzarella cheese (shredded)
- 1/4 cup Parmesan cheese (grated)
- 2 tbsp fresh basil (chopped)
