Minestrone Soup
Pasta, veggies, and broth all hanging out together — the soup that tastes like home, no matter where you are from.
Ingredients
- 2 tbsp olive oil
- 1 medium onion (diced)
- 2 medium carrots (diced)
- 2 stalks celery (diced)
- 3 cloves garlic (minced)
- 1 can (400g) crushed tomatoes
- 4 cups vegetable broth
- 1 medium zucchini (diced)
- 1 cup green beans (cut into pieces)
- 1 can (400g) kidney beans (drained)
- 1 cup ditalini pasta
- 2 cups fresh spinach
- 1/2 cup Parmesan cheese (grated, for serving)
My Nonna's Favourite Soup (Almost)
Minestrone is one of those recipes I grew up eating in a dozen different versions. Every Italian grandmother has her own take, and honestly, they're all right. My version borrows a little from each one I've loved, with a few tweaks I've landed on after years of testing.
