Spicy Peanut Sweet Potato Soup
Creamy, nutty, with a chili kick that warms you from the inside. This is the soup that made me realize sweet potatoes belong with peanut butter.
Ingredients
- 600 g sweet potatoes (peeled and cubed)
- 4 tbsp natural peanut butter (smooth)
- 1 large onion (diced)
- 4 cloves garlic (minced)
- 1 tbsp ginger (grated)
- 800 ml vegetable stock
- 200 ml coconut milk
- 1 tsp chili flakes
- 1 tsp cumin
- 1 lime (juiced)
- 1 handful cilantro (for garnish)
- 2 tbsp roasted peanuts (chopped, for garnish)
This soup sounds weird until you taste it. Sweet potato and peanut butter? Trust me.
