Birria Tacos
Shredded meat braised for hours, piled into tortillas with that killer dipping broth on the side.
Ingredients
- 3 lbs beef chuck roast (cut into large chunks)
- 5 pieces dried guajillo chiles
- 3 pieces dried ancho chiles
- 1 can (14.5 oz) fire-roasted tomatoes
- 2 peppers chipotle peppers in adobo
- 2 cups beef broth
- 1 large onion (quartered)
- 5 cloves garlic
- 1 tbsp cumin
- 1 tsp oregano
- 0.25 tsp ground cloves
- 2 tbsp apple cider vinegar
- 16 pieces corn tortillas
- 2 cups Oaxaca cheese (shredded)
- 2 pieces bay leaves
- 1 piece cinnamon stick
- 2 tsp salt
- 1 tsp pepper
