🍛 Caribbean Goat Curry

A West Indian staple that’s slow-cooked, deeply spiced, and full of soul.

Caribbean goat curry is one of those dishes that takes time — and rewards every single minute of it. The goat becomes fall-apart tender, the Scotch bonnet brings fruity heat, and the allspice gives it that unmistakable Caribbean warmth. This is Sunday cooking at its finest.

🧭 About This Dish

Curry goat (or goat curry, depending on who you ask) is a staple across the Caribbean, especially in Jamaica and Trinidad. Brought by Indian indentured workers in the 1800s, it was adapted with local ingredients — Scotch bonnet peppers, allspice, thyme — and became a dish that’s at the heart of every celebration.

👩‍🍳 Instructions

1. Marinate the goat: Season goat pieces with curry powder, allspice, garlic, thyme, salt, and pepper. Let it marinate for at least 2 hours — overnight is best.

2. Sear the meat: Brown the goat pieces in batches in hot oil. Get a good crust on every side.

3. Build the curry: In the same pot, sauté onions until golden. Add more curry powder and cook for 1 minute. Return the goat to the pot.

4. Add liquid and Scotch bonnet: Add water or stock to just cover the meat. Drop in a whole Scotch bonnet (don’t burst it unless you want serious heat!) and potatoes.

5. Slow cook: Cover and simmer on low for 2–2.5 hours until the goat is fork-tender and the sauce has thickened.

6. Serve: With plain rice or roti. Pick out the Scotch bonnet before serving.

💡 Tips from My Kitchen

Keep the Scotch bonnet whole — it adds beautiful fruity flavor without overwhelming heat. Pierce it only if you want the full fire.

Goat needs time — there’s no shortcut. Low and slow is the only way to get that melt-off-the-bone tenderness.

Can’t find goat? Lamb shoulder works as a substitute, though the flavor is different.
