🥗 Fattoush
The Lebanese salad that proves stale bread can be the best ingredient in your kitchen.
Fattoush is what happens when you take the freshest vegetables, the tangiest sumac dressing, and shards of crispy fried pita and toss them all together. It’s vibrant, it’s crunchy, and it’s the kind of salad that makes you actually crave salad.
🧭 About This Dish
Fattoush comes from Lebanon and is the ultimate Middle Eastern bread salad. The name comes from fatt — meaning “to crumble” — referring to the crispy pita pieces. The real star is the sumac dressing: tangy, slightly fruity, and completely addictive.
👩🍳 Instructions
1. Crisp the pita: Tear or cut pita bread into bite-sized pieces. Fry in olive oil until golden and crunchy, or bake at 200°C for 8 minutes. Season with salt immediately.
2. Prep the veggies: Chop tomatoes, cucumber, radishes, and lettuce. Slice spring onions. Tear fresh mint and parsley leaves.
3. Make the dressing: Whisk together olive oil, lemon juice, ground sumac, garlic, salt, and a drizzle of pomegranate molasses.
4. Toss it all together: Combine the veggies, pour over the dressing, and toss well. Add the crispy pita pieces last.
5. Serve immediately: This salad is all about the contrast between crispy pita and fresh vegetables — don’t let it sit!
💡 Tips from My Kitchen
Sumac is everything here — that tangy, lemony spice is what makes fattoush taste like fattoush. Don’t skip it.
Add the pita at the last second — you want maximum crunch.
Pomegranate molasses adds a sweet-tart depth that takes the dressing to another level.
