Hearty Lentil Soup
Lentils, veggies, and spices simmering together make this one of those fill-you-up soups that gets better with time.
Ingredients
- 1.5 cups green or brown lentils (rinsed)
- 6 cups vegetable broth
- 14.5 oz diced tomatoes (1 can)
- 1 medium yellow onion (diced)
- 2 medium carrots (diced)
- 2 stalks celery stalks (diced)
- 4 cloves garlic (minced)
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 2 cups fresh spinach
- 1 whole lemon (juiced)
- to taste salt and pepper
