Whole Roasted Cauliflower with Tahini and Pomegranate
A whole head of cauliflower, roasted until golden and tender, drizzled with tahini and scattered with pomegranate seeds. This is the centerpiece dish that makes vegetables the star.
Ingredients
- 1 large head cauliflower (leaves removed)
- 4 tbsp tahini
- 1 lemon (juiced)
- 1 clove garlic (grated)
- 3 tbsp pomegranate seeds
- 2 tbsp pine nuts (toasted)
- 3 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 handful fresh parsley (chopped)
