Creamy Potato Soup
A thick and velvety potato soup loaded with bacon, cheddar, and chives. This loaded baked potato in soup form is pure cold-weather comfort.
Ingredients
- 3 lbs Yukon Gold potatoes (peeled and diced)
- 6 slices bacon (chopped)
- 4 cups chicken broth
- 1 cup heavy cream
- 1.5 cups shredded cheddar cheese
- 1 medium yellow onion (diced)
- 3 cloves garlic (minced)
- 3 tbsp all-purpose flour
- 3 tbsp fresh chives (chopped)
- for garnish sour cream
- 1 tsp salt
- 1/2 tsp black pepper
A Loaded Baked Potato in Every Spoonful
If you have ever looked at a loaded baked potato -- piled high with bacon, cheese, sour cream, and chives -- and thought, "I wish I could eat this with a spoon," then this soup is for you. It is thick, velvety, and loaded with all the toppings that make baked potatoes irresistible. On a cold evening, there is honestly nothing I would rather eat.
I make this soup at least once a month from October through March, and it never gets old.
