Udon Noodle Stir Fry

Ingredients
- 14 ounces Udon noodles
- 3 tablespoons Soy sauce
- 1 tablespoon Oyster sauce
- 1 tablespoon Mirin
- 2 teaspoons Sesame oil
- 1 teaspoon Sugar
- 2 tablespoons Vegetable oil
- 1 whole Bell pepper (sliced)
- 1 cup Broccoli florets
- 1 whole Carrot (julienned)
- 2 cloves Garlic (minced)
- 1 tablespoon Fresh ginger (grated)
- 2 stalks Green onions (sliced)
- 1 tablespoon Sesame seeds (toasted)

Udon noodle stir fry — yaki udon, if we are being proper — is one of my absolute favorite quick dinners. Those thick, bouncy noodles have a chew that thin noodles simply cannot match, and they soak up sauce like little sponges. Toss them with crispy vegetables and a savory-sweet soy and sesame glaze, and you have a one-pan meal that is ready in under twenty minutes and tastes like it came from a Japanese restaurant.
