  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/3 cup cold butter, cubed
  • 3/4 cup buttermilk, cold
  • 450 g breakfast sausage
  • 3 tbsp all-purpose flour, for gravy
  • 2.5 cups whole milk
  • 1 tsp black pepper, generous

The Breakfast That Fixes Everything

I am fully convinced that biscuits and gravy can cure a bad mood, a rough morning, or a long week. There is nothing fancy about it — flaky, tender biscuits split open and absolutely smothered in a rich, peppery sausage gravy. It is unapologetically indulgent, deeply comforting, and the kind of meal that makes you close your eyes and sigh after the first bite. This is Southern cooking at its finest, and I refuse to save it just for weekends anymore.

I learned to make biscuits from my grandmother, who measured nothing and somehow got perfect results every single time. It took me years to reverse-engineer her technique, but I think I have finally cracked the code.

Flaky Biscuits from Scratch

Preheat your oven to 220°C/425°F. In a large bowl, whisk together two cups of all-purpose flour, one tablespoon of baking powder, one teaspoon of salt, and a pinch of sugar. Cut one-third cup of cold, cubed butter into the flour using a pastry cutter or your fingertips until the mixture looks like coarse crumbs with some pea-sized pieces of butter still visible. Those butter chunks are what create the flaky layers, so do not blend them in completely.

Make a well in the center and pour in three-quarters of a cup of cold buttermilk. Stir with a fork until the dough just barely comes together — it should look shaggy and a bit sticky. Turn it out onto a lightly floured surface, pat it to about two centimeters thick, fold it in thirds like a letter, and pat it out again. Do this one more time. This folding technique is what gives you those gorgeous, flaky layers.

Cut into rounds with a biscuit cutter — press straight down without twisting, because twisting seals the edges and prevents the biscuits from rising properly. Place them on a baking sheet so they are just barely touching (this helps them rise taller) and bake for 12 to 15 minutes until they are beautifully golden on top.

Rich, Peppery Sausage Gravy

While those biscuits bake, crumble 450 grams of breakfast sausage into a large skillet over medium heat. Cook it until it is deeply browned and crispy in spots, breaking it into small pieces as it cooks. Do not drain the fat — that is flavor.

Sprinkle three tablespoons of all-purpose flour over the sausage and stir constantly for about one minute to cook out the raw flour taste. Slowly pour in two and a half cups of whole milk, stirring the entire time to prevent lumps. Keep stirring as the gravy comes to a simmer and thickens, about five minutes. Season generously with one teaspoon of black pepper and salt to taste. The gravy should be thick enough to coat the back of a spoon but still pourable.

Bring It All Together

Split those warm, fresh-from-the-oven biscuits in half, place them on plates, and ladle the sausage gravy generously over the top. Do not be shy — the biscuits can handle it.

Tina's Tips

  • Everything must be cold for the biscuits — cold butter, cold buttermilk, even cold hands if you can manage it; warm ingredients make tough, dense biscuits
  • Press the biscuit cutter straight down and resist the urge to twist; twisting seals the layers and you lose that beautiful rise
  • Use breakfast sausage with sage seasoning for the most flavorful gravy; the herbs in the sausage do most of the work for you
  • The gravy thickens as it cools so keep it slightly looser than you think it should be while it is on the stove
  • Make extra biscuits — they freeze beautifully and reheat in a 175°C/350°F oven in about ten minutes
